🌷 Spring Reset: Simple Meals, Fresh Starts & Feeling Back in Control

There’s something about spring that just makes you want to reset.
Longer days. More energy. A little motivation to get organized, eat better, and simplify life again.
And if you’re anything like me… busy nights don’t magically disappear just because the season changes.
That’s why I love having a few go-to meals that make life easier without sacrificing flavor (or adding stress).
🍽 My Go-To: Easy Crockpot Tuscan Chicken
This one is on repeat in our house—especially during those “run in the door and need dinner handled” kind of days.
It’s creamy, comforting, and feels a little elevated… without any extra effort.
Ingredients
For the chicken:
• 4 boneless, skinless chicken breasts (about 2 lbs)
• ½ tsp salt
• ½ tsp Italian seasoning
• ¼ tsp paprika
• ¼ tsp pepper
Tuscan Cream Sauce:
• 1 cup heavy cream
• 1 tbsp cornstarch
• 3 cloves garlic (minced)
• ¼ tsp salt
• ¼ tsp pepper
• ½ cup sun-dried tomatoes (drained & chopped)
• ¾ cup Parmesan cheese
• 1 cup fresh chopped spinach
Instructions
1. Place chicken in the slow cooker and season.
2. In a bowl, mix cream, cornstarch, garlic, salt, and pepper. Pour over chicken.
3. Add sun-dried tomatoes and Parmesan.
4. Cook on low for about 3 hours (until chicken is cooked through).
5. Stir in fresh spinach just before serving.
